Busy days call for meals that are fast, flavorful, and functional. This Egg Roll in a Bowl hits all the marks: packed with protein, rich in fiber, full of brain-supportive nutrients—and on the table in 20 minutes. It’s a weeknight hero that fuels both body and mind.
What is Egg Roll in a Bowl?
Egg Roll in a Bowl is a quick, one-pan meal that captures all the savory, satisfying flavors of a traditional egg roll—without the wrapper or deep frying. It’s made with ground meat (like turkey or pork), shredded cabbage (typically from a coleslaw mix), garlic, ginger, and coconut aminos for a soy sauce–like flavor. Topped with sesame oil, green onions, and optional sriracha, it’s a nutrient-dense, low-carb dish that’s loaded with fiber, protein, and flavor—perfect for supporting balanced energy and mental clarity.
How long is Egg Roll in a Bowl good for?
This is one of those foods that truly can taste better the following day- maybe it’s just because it used no effort? You know, that concept of how a sandwich or salad always tastes better just because someone else made it?!
But, more precisely: Egg Roll in a Bowl will keep well in the refrigerator for up to 4 days when stored in an airtight container.
Storage Tips:
Reheat in a skillet or microwave until warmed through.
Let it cool before refrigerating to prevent excess moisture.
Store without toppings (like sesame seeds, oil, or sriracha) and add them fresh when reheating. Sesame oil is a fragile oil and is not meant for high heat. Be sure to leave this off if reheating.
How to make Egg Roll in a Bowl:
Ingredients:
- Ground Turkey or Pork: Excellent source of high-quality protein and amino acids like tryptophan, which supports serotonin production (your mood-stabilizing neurotransmitter).
- Red Bell Pepper: Loaded with vitamin C, a powerful antioxidant that combats oxidative stress linked to anxiety and fatigue.
- Garlic + Ginger: These anti-inflammatory powerhouses support gut health, which is closely tied to mood and immune function.
- Cabbage (Coleslaw Mix): Rich in fiber and prebiotics that nourish your gut microbiome—essential for mental clarity and stable energy.
- Coconut Aminos: A gluten-free alternative to soy sauce that adds umami flavor without the inflammation-promoting additives.
- Sesame Seeds + Oil: Provide healthy fats and trace minerals like zinc and magnesium, key for cognitive function and hormone balance.
- Avocado oil: Healthy fat needed for creating hormones and balancing blood sugar.
Instructions:
- Heat avocado oil in a large skillet over medium heat.
- Add ground meat and cook thoroughly, breaking it up as it browns.
- While meat is cooking, slice red bell pepper and green onion tops.
- Mince garlic and grate ginger.
- Once the meat is cooked, stir in garlic and ginger.
- Add coleslaw mix, sliced pepper, and coconut aminos to the skillet. Stir well.
- Cook until cabbage is just wilted but still vibrant.
- Serve with a drizzle of sesame oil, and garnish with sesame seeds, green onions, and sriracha if desired.

Egg Roll in a Bowl with Beef:
There is no reason beef can’t be substituted in a 1:1 ratio for this recipe. In fact. have done it myself, but I do choose to omit some of the oil, if it’s a fattier blend.
Egg Roll in a Bowl without Sesame Oil:
I understand many have strong feelings about the taste (or smell) of sesame oil. Since this is only used as a last minute flavor add, you can simply leave it off and enjoy yours without sesame oil. This would also work for a sesame allergy- leave off the sesame seeds and oil.
This one-pan wonder delivers maximum flavor and function with minimal effort. It’s one of those go-to meals that supports your mental health, keeps your energy steady, and still tastes like comfort food. Batch it, pack it, reheat it—it’s as versatile as it is healing.
Don’t you just love an easy meal thats full of color and flavors!? This meal is gluten, grain, and dairy free!
