Ingredients
1and 3/4 cups420ml milk (dairy or nondairy)
2large eggs
1/3cuppure maple syrup
1/4cupbuttermelted and slightly cooled*
1/4cupunsweetened applesauce
3cupsold-fashioned whole rolled oats
1/2cupcollagen peptides
3tablespoonsflax seeds
1/3cuppecans or walnuts
1/4cuppepitas
1teaspoonbaking powder
1teaspoonground cinnamon
1teaspoonpure vanilla extract
1/4teaspoonsalt
1and 1/2 cups225g fresh or frozen mixed berries (do not thaw)
Instructions
Preheat the oven to 350°F (177°C).
Lightly grease or line a 9x9 inch baking pan.
In a large bowl, whisk together all ingredients until well combined.
Pour the mixture into your prepared pan.
Top with a few extra berries, nuts, or seeds for texture and visual appeal.
Bake for 35 minutes, or until the top is golden and the center is just set.
Cool for 5 minutes before serving.
Notes
Experiment with using dark chocolate chips for an indulgent treat. My kids love this version. Tasted great with a drizzle of peanut butter on top!
