Berry Baked Oatmeal: One bowl- Protein packed

Moist, and comforting baked oatmeal is a great prep ahead breakfast meal. This recipe focuses on nutrient density and macro balance for steady energy and clear headed thinking all day.

Ingredients

  • 1 and 3/4 cups 420ml milk (dairy or nondairy)
  • 2 large eggs
  • 1/3 cup pure maple syrup
  • 1/4 cup butter melted and slightly cooled*
  • 1/4 cup unsweetened applesauce
  • 3 cups old-fashioned whole rolled oats
  • 1/2 cup collagen peptides
  • 3 tablespoons flax seeds
  • 1/3 cup pecans or walnuts
  • 1/4 cup pepitas
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 and 1/2 cups 225g fresh or frozen mixed berries (do not thaw)

Instructions

  • Preheat the oven to 350°F (177°C).
  • Lightly grease or line a 9x9 inch baking pan.
  • In a large bowl, whisk together all ingredients until well combined.
  • Pour the mixture into your prepared pan.
  • Top with a few extra berries, nuts, or seeds for texture and visual appeal.
  • Bake for 35 minutes, or until the top is golden and the center is just set.
  • Cool for 5 minutes before serving.

Notes

Experiment with using dark chocolate chips for an indulgent treat. My kids love this version. Tasted great with a drizzle of peanut butter on top!
